I came here to post this same feedback! Although in the Microsoft 365 App for enterprise (2016 is old school).
It is far too informal to include the full name everytime you want to mention someone and I'd say 9 times out of 10 I'll delete the last name. I'd only keep it if it was a more formal tone or there were duplicate people in the thread with the same name.
This would need to be done across all the M365 apps that support mentions.
I'd like to either be able to set a default preference or have a way to do it easily with the keyboard as I type (e.g. tab once for first name or twice for both)
