Cannot color categorize in new outlook
Is there a way to color categorize calendar events in the NEW outlook?
The Categorize button only shows a small list of Categories that I cannot edit or choose for their usefulness. Previously I had all of them to scroll through, but now I have More Clicks to get the item that I wish. It was better before to have a long list to scroll through, or give me the ability to control what is on the initial list. :)

I find the opposite is true. My old events retained their colors, but new events are arbitrarily colored.

Fix Mail auto color categorizing replied items (in the sent items box) based on if the item that is replied to is categorized as something.
Say I receive an Email from Joe, and I color categorize that mail as red. When I reply to Joe, my sent mail is also categorized as red, even though I only wanted the incoming mail from Joe to be red.

Color categorization did not transition to new Outlook for existing calendar events. Old Outlook has all events in their respective categories and colors. New Outlook discarded colors for all existing events and they are now one color and cannot be edited. New events can still be categorized and appear with the appropriate color. This is only affecting existing events.

The new way the colors look when categorized is just awful. If I could attached screens prints of old & new, it would be easier to point out exactly what's wrong with it. Some items have a colored block (particular time), others are just a change in text color (all day or no particular time). The colors are all muted so the difference between green and blue text or orange and red text are almost indistinguishable. The yellow is almost invisible. Even the colors of the solid blocks are too muted. We also need more colors if possible, so each person's tasks and appointments are a different color.
