Compose email window: the new to/from/subject ribbon is way too big
stop stealing screen real estate for the thing I want to use it for: the contents of my email.

and the font is way too small in the TO, FROM and SUBJECT spaces--can't find anywhere on this site how to enlarge font and with failing eyesight, I'm having difficulties reading

Header inf ormation is occupying far too much space, so information entered as notes (e.g. agenda) is scrolling withing a few lines - very user unfriendly.
It can be that extreme that you have to Ctrl-A Ctrl-C the notres and insert it into an empty Word. -

I'm not sure why you feel compelled to change something that works just fine. Newer is, in many cases, not better.

Agree. This was the first thing I noticed after installing the update and come on MS. What the heck? At least the Inbox/main screen has an option for "Use Tighter Spacing." The compose message window is now so awful I'm installing other mail clients just to write emails in.

I have five fields always active:
From
To
CC
BCC
SubjectAdd in the ribbon and even on a 1920x1080 monitor and only half the screen is open for editing (most of which is taken up by my signature block).

I have a big screen, but I also don't like the new look. The subject line looks kind of squashed and insignificant compared with the recipients. The lines are pale and indistinct. It just feels and looks unnatural, to the extent that it makes me feel slightly queasy using it!
I'd be curious to know the thinking behind this particular change.

It basically takes up half the screen (@ 1920*1080 resolution)!
