This is a feature present in Office 2016 for Mac and it's a real time saver. Even converting a meeting invite back to a standard message is possible via a slider button somewhere in ribbon while composing.

Quite often I accidentally start drafting an email although I actually want to create a meeting. When I realize my mistake, the only option is to create a meeting and copy/paste everything. One simple button in the ribbon would make this process much simpler.
Example could be an existing button to change an Appointment into a Meeting. -
