I came here to post this same feedback! Although in the Microsoft 365 App for enterprise (2016 is old school).
It is far too informal to include the full name everytime you want to mention someone and I'd say 9 times out of 10 I'll delete the last name. I'd only keep it if it was a more formal tone or there were duplicate people in the thread with the same name.
This would need to be done across all the M365 apps that support mentions.
I'd like to either be able to set a default preference or have a way to do it easily with the keyboard as I type (e.g. tab once for first name or twice for both) -

Great idea. I would also love to have the possibility to choose from @FirstName Lastname, @FirstName or @Nickname on a per contact basis or having the choice when mentionning with default to last selection for each contact.

I would prefer just to have first name as well - it feels weird to read first and last in a sentance (Can @Jon Doe please follow up on...).

It is very rare for me to leave both the first name and last name, and this would be a significant improvement for me.

Yes, I agree. This is very painful, because for my organization it shows as Last Name, First Name which just looks silly in an email. So, I manually go in and delete the last name leaving only @FirstName. This is quite a hassle.
