Auto create contact information
Contacts/People are auto created based on email addresses you have received an email from. Most email have extended contact information in the signature. A solution that tries to create contact information (telephone/addresses +++) based on this would be great. There are great Business Card readers that work, so it is pretty viable feature.
A signature often start with the name of the sender, so that would be the cue. A copy of the source data should be included for manual correction.

outlook should retain email addresses of those I have written to before. it does not, which is very annoying. you have to go find the address and copy and paste it

When you go to an existing message there should be a way to copy the email address to create a contact or when creating a new email.
